Kare-Kare

Ingredients:
3c oxtail, cleaned and cut into 1'
1tsp garlic, chopped
1pc large onion, chopped
1c eggplant, diagonally cut
1c long green beans, cut into 2"
1bundle bok choy, washed
1 1/2c peanuts
1tbps cooking oil
1/2c shrimp paste
4tbsp peanut butter
1 1/2tsp annatto powder

Procedure
- chop peanuts in a food processor until grainy then add peanut butter and blend together until well mixed. Set aside.
- Heat oil in a sauce pot then dissolve annato powder. Saute garlic and onion.
- add oxtail and saute. Pour in 2 liters of water and boil meat until tender. Add more water if needed.
- add peanut mixture and stir until dissolved. Season with salt and pepper.
- steam vegetables in a steamer. Set aside
- once meat is tender transfer in a bowl and add steamed vegetables.
- serve hot with shrimp paste on the side.
