Morcon
Ingredients:
1lb beef flank, sliced into 1/4 inch thick (pound with meat mallet if its too thick)
3pcs chorizo de bilbao, cut to lenghtwise
2pcs red salted egg, lengthwise quartered
2pcs dill pickle, cut into lenghtwise
1c cheddar cheese, cut into strips
1tbps soy sauce
1tsp ground pepper
water
Sauce
1/2c ginger, chopped
1/4c garlic, chopped
1/4c shallots, chopped
1/2c soy sauce
1c water
5tbsp granulated sugar
1/2 tsp tapioca thickener
3pcs star anise
3pcs bay leaf
1tsp peppercorn
Procedure
- combine sauce mixture in a sauce pot except for tapioca thickener.
- simmer mixture until sugar has melted.
- dissolve tapioca thickener in 4tbsp of water.
- slowly pour tapioca mixture in sauce pot until sauce is syrupy.
- pour sauce over a strainer to remove solid ingredients. Set aside.
- lay beef on a flat surface, then arrange pickle, egg, cheese, chorizo in the middle. Then roll beef then secure roll with a thread or string

combine water, ground pepper and soy sauce in a pot and add beef rolls.
- bring it to a boil then lower down heat and simmer for another hour.
- slice morcon and arrange on a serving dish. Simmer the sauce until hot and pour over beef rolls. Garnish and serve hot.
