Imbotido

Ingredients:

1 1/2lb ground pork
1/2c raisins
3pcs whole eggs, hard boiled, cut into wedges
1/2c carrots, shredded
4pcs chorizo de bilbao, cut into lengthwise
1c cheddar cheese, cut into strips
2pcs dill pickle, cut into lengthwise
salt and pepper to taste

Procedure

- in a bowl, combine ground pork, raisins and carrots. Season to taste.
- spread about 1c of ground pork mixture on an aluminum foil leaving a little bit of space on each end to seal it. Do this until all ground pork is used.
- place pickle, cheese, chorizo and egg in the middle. Carefully roll foil and seal on the each end by twisting it.
- cook rolls in a steamer and steam for 30 minutes or until cooked.
- cut diagonally and serve hot.

Note: you can fry imbotido slices before serving them.
